Taste of Turkey: Kofta-Event — Köfte Salatası

Insane in the kitchen and Kleine Chaosküche are on a culinary journey through Turkey and this month theme is “Kofta”. I had to post for this event.

As soon as the weather is suitable everyone in Turkey is crazy for barbecuing and “Kofta” (Turkish meatballs) are the easiest way to enjoy barbecue outside in the garden with family and friends.

Today I want to show you a basic and traditional recipe. You just need ground meat, onions, chili powder, salt and pepper. No eggs and no breadcrumbs, but the ground meat must be fresh otherwise the meatballs can break easily.


I love to serve the meatballs with lots of fresh chopped herbs, dried tomatoes, lemon slices and sumach. My family prefers aditional aromatised butter and for more heat, you can have some chili flakes. Add a courgette salad with yogurt as a side dish and bread and ready is your fresh and delightful meal. Enjoy it! Afiyet olsun!


For the courgette salad:
4 tablespoons extra virgin olive oil
3 courgettes, coarsely grated
3 cloves garlic, diced
4 shallots, finely chopped
Salt and freshly ground pepper
600 g Turkish or Greek style yogurt

For the meatballs:
800 g minced meat (lamb and beef)
2 large onions, finely grated (I prefer red onions)
1 tsp chili powder
Salt and freshly ground pepper
1 bunch of parsley, finely chopped
1 bunch of chives, finely chopped
1/2 bunch mint, finely chopped
100 g dried tomatoes in olive oil, drained and finely chopped

For the flavoured butter:
2 tablespoons butter
1/2 tsp paprika
Chili flakes, sumac and lemon for serving

  1. For the courgettes salad: Heat the olive oil in a frying pan and fry onions until translucent. Add garlic and courgettes and fry well. Season with salt and freshly ground pepper and remove from heat. Let it rest covered. Just before serving stir in yogurt and if necessary season with salt and pepper.
  2. For the meatballs: In a large bowl mix the minced meat well with grated onions, chili powder, salt and pepper. Knead well for a few minutes. Cover the meat and refrigerate for about an hour. Form about 16 meatballs and roast them well from both sides on the barbecue or in a pan. Just before serving roughly slice the meatballs and mix well with the chopped herbs and dried tomatoes.
  3. Heat the butter in a small pan. Add paprika and let it foam up. Immediately remove the pan from heat.
  4. To serve: Cut the meatballs into thin slices and mix well with parsley, chives and mint. Spread the courgette salat onto the plates. Arrange the Kofta-slices with the herbs over the salad. Finally garnish with flavoured butter, lemon juice, chilli flakes and sumac. Serve pita or baguette to. Good Appetite! Afiyet olsun!
